Bretzel and Dough balls
Typical industrial line for products with soda of various shapes, rolls proofed and heart baked.
Line typically designed with a Swings Tray proofer with cotton coated swings-carriers or a swing tray proofer with cups and a Stone Belt tunnel oven or a Steel Belt tunnel oven. Reciprocating belt or finger belt to load the proofer. Proofer with compensating trolley which allows continuous unloading while loading is intermittent. In case of specific requirements proofer can be divided into two separated climate zones with different temperature and humidity conditions: the 1st part is for proofing, the 2nd one is for cooling-retarding or stiffening of the dough.
Every project is custom-made and meets the specific customer requirements in terms of volume, space and technology. Our aims are repeatable final product quality, high output with no downtime and reasonable production flexibility on an industrial scale.
